Dessert Recipe 1: Chocolate Chip Cookie Dough Keto Ice Cream

Ingredients:
-        2 1/2 cups cream
-        1 cup almond milk
-        1/2 cup Swerve
-        3 egg yolks
-        1 teaspoon vanilla extract
-        1/4 teaspoon each liquid stevia extract and xanthan gum
Cookie Dough:
1 cup almond flour
1/4 teaspoon salt
1/4 cup softened butter
1/4 cup Swerve
1 small egg
1/4 tsp vanilla extract
1/8 cup cacao nibs
Directions:
  1. Place a bowl over an ice bath and set aside.
  2. Combine the cream, almond milk, and Swerve over medium heat, until the mixture reaches 175 degrees.
  3. Whisk the egg yolks in a medium bowl.
  4. Slowly add 1 cup of the hot cream mixture while whisking, in order to temper the yolks.
  5. Add the yolk mixture back into the saucepan and cook until mixture reaches 180 degrees.
  6. Pour mixture into the bowl that is on top of the salt bath for 10 minutes.
  7. Cover the bowl with plastic wrap and refrigerate for 3 hours.
  8. While the ice cream is chilling, Whisk the almond flour and salt for the cookie dough.
  9. In another bowl, beat the butter and Swerve.
  10. Combine the egg and vanilla into the butter mixture, then mix in the dry ingredients.
  11. Fold in the cacao nibs.
  12. Spoon the cookie dough onto waxed paper by the teaspoon.
  13. Place cookie dough in the freezer.
  14. Take out the ice cream and stir in the vanilla extract and stevia extract.
  15. Sprinkle with xanthan gum and stir until smooth.
  16. Pour the ice cream into the canister of an ice cream maker and churn according to manufacturer's directions.
  17. Once you have churned the ice cream, transfer half of it to a large, airtight container. S

  19. Freeze for 2 hours.

-        1/4 cup softened cream cheese
-        1/4 cup strong brewed coffee
-        1 cup almond milk
-        2 cups heavy cream
-        1/4 cup Swerve
-        1/2 cup Stevia
-        1 1/2 tablespoons maple syrup
-        1 teaspoon xanthan gum
-        1 teaspoon instant
-        1/2 teaspoon vanilla extract
-        1/8 teaspoon salt
Directions:
  1. Fill a large bowl with ice water.
  2. In a different bowl, beat the cream cheese until smooth.
  3. In a saucepan, combine the brewed coffee, almond milk, heavy cream, Stevia, and maple syrup and bring to a boil.
  4. Lower heat and cook for 4 minutes.
  5. Stir in the xanthan gum, coffee extract or powder, and vanilla.
  6. Gradually combine the hot milk mixture into the cream cheese until smooth.
  7. Add the salt.
Set the bowl in the ice water bath, stirring occasionally, for 20 minutes.
  1. Add the ice cream into a plastic container and press a sheet of plastic wrap over the top of it, then close with an airtight lid.
  2. Freeze for 4 hours.

Dessert Recipe 3: Raspberry Keto Ice Cream

Ingredients:
-        2 1/2 cups heavy cream
-        1 cup almond milk
-        ½ cup Swerve
-        4 egg yolks
-        1 1/2 ounces chopped cocoa butter
-        1/2 teaspoon xanthan gum
-        1 teaspoon vanilla extract
-        1/2 tsp liquid stevia extract
-        1 1/2 cups frozen raspberries
Directions:
  1. Set a large bowl over an ice bath and set aside.
  2. Combine cream, almond milk and sweetener over medium heat in a saucepan.
  1. Stir until mixture reaches 175 degrees.
  2. Whisk egg yolks in another bowl.
  3. Add about 1 cup of the hot cream mixture to the egg yolks, whisking continuously, to temper the yolks.
  4. Slowly combine egg yolk mixture back into the cream, whisking continuously.
  5. Cook until mixture reaches 180d degrees.
  6. Remove from heat and add chopped cocoa butter. Let stand one minute to melt, then combine the xanthan gum.
  7. Pour mixture into the bowl in the ice bath for 10 minutes, then wrap in plastic wrap and chill for 3 hours.
  8. After 3 hours, add the vanilla and Stevia and pour the ice cream into a canister and churn in ice cream maker according to manufacturer’s directions.
  9. Swirl in half of the frozen raspberries.
  10. Transfer remaining mixture to the container and swirl in remaining berries.
  11. Freeze for 1 hour.
